After the old forum software breaking in a way that we were unable to fix, we've migrated the site to a new platform.

Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.

Nuova Simonelli Mythos: too much heat!

The cafe I am working with is using two Nuova Simonelli Mythos and we're having temperature problems with the grounds.

  • anyone who's familiar with NS machines, appreciate any help you can give koax on this. tx A
  • Hi Koax - who are you measuring grind temperature and at what stage of the process do you measure it? Certainly coffee grinds should not be running hot at any stage of the grinding process I run with a Mazzer Robur and a Compak K10 WBC at my cafe and whilst the Compak runs a little faster both machines work extremely well even during the busiest periods You say that you have two grinders - does that mean that you have two coffee machines? Otherwise my suggestion would be to alternate between them both during the busy periods to keep them from over heating Also how well ventilated is the space? A fan pointed upwards at the grinders can help to keep them cool when they're busy Have you tried contacting the manufacturer / distributor? If in doubt I would be shopping around for another product if I were you! Cheers, ACG

I measured with an IR thermometer right after grinder a shot. Otherwise, I'll try alternating between our two grinders and see how it goes...
  • both my grinders have had less than six months use as my cafe is only five months old but all of my equipment is serviced annually whether I think it needs it or not or whenever I think there may be a subsequent impact upon shot quality The last time I used a flat burr was some time ago but it was a La Chimbali Magnum with Titanium blades and that used to heat up a lot especially as we were chewing through 10kg per day - and it wasnt really up to the task At my new joint we have evaporative cooling with vents positioned over the grinders to keep the beans cool and moist - only really works in Melbourne though as we have less humidity than North of the border Cheers, Pat

That is approximately what we go through everyday (10kg).
  • perfectionism is great, but are you noticing dramatic flavour change, outside roasting differences. I use a k10. It gets hot and clumps a little. i've had the same dilemma with a robur. All grinders get hot and sluggish. But if the flavour isn't dramatically changing, then don't over stress. Of course get a conical burr grinder. But in the end, the flavour is paramount, no amount of technical hypothesis or elabouration will make a difference, if it doesn't actually effect the taste. In the end, thats what we're selling. I agree, alternate grinders if you have 2
  • also, if you are unaware. Conical over flat will always be the better choice, as the conical burrs create a rounder, more consistent grind. therefore a more consistant extraction....Its phyisics maaaaan.... :o

I agree with you that "In the end, thats what we're selling".
