I saw a couple of episodes of the series on chocolate. Interesting, but the man himself irritated me. Shame the conscious chocolate folks only do 60% I normally buy the 70% lindt, or occasionally the 85% if I want something a bit less sweet. Incidentally, I have an excellent recipe for chocolate mousse. Almost foolproof. Can post if anyone is interested. Do we have a place for recipes?
UMN I would be interested. Mmm should have added, I made a gluten free cake today and I killed it, maybe completely foolproof would be better LOL I'll give anything a go though I used to like lindt but most have gluten in them so no more lindt for me unfortunately.

Don't have the recipe.with me, so this is from memory. Ingredients: Dark chocolate (orig recipe was 115g I use 175g) Free range eggs (orig was 4, I use 6) Method: Separate eggs Melt chocolate in double boiler (not Breville), or microwave, I find it easier on stovetop as can burn in microwave. While chocolate is melting, beat egg whites until stiff peaks form. When chocolate is completely melted, remove from heat and allow to cool for a minute. Beat in egg yolks. Pour chocolate mixture over egg white and fold in gently until just combined. Pour into individual ramekins, cocktail glasses, or espresso glasses. Chill until set. Enjoy Serves 4 (I upsized because it is popular in our house). One variation is to adsd a shot of espresso to the chocolate mix before folding into the egg whites.
You can vary proportion of chocolate and eggs slightly.Maybe a bit more chocolate if you want to add a larger amount of espresso. Other variations use creme de menthe, cointreau or liquer of your choice. If you use conscious choc and eggs from your own chooks, you know it is all ethical. It is extremely healthy as it is low gi, low fat, dairy/gluten free... That's my excuse for second helpings anyway.
