That's the point Patrick. The author of the article basically concludes that the definition of ***specialty coffee*** may well be whatever product any particular company can come up with, that satisfies the consumers need/demand. This is interesting because it means that if for example, you succumb to advertising campaigns starring semi naked people (both genders if you please) caught in "chic" poses, and as a consequence you demand a packet of their coffee, that happens to contain a great proportion of low quality coffee, that that lowqual stuff is somehow construed to be a ***specialty*** coffee. Wow! You can see why this term is confusing, and erroneous. Refroth milk??? No. You try...you will find the flavour changes, the milk loses its body and sweet flavour and the entire brew loses its balance. In all you get a thin, metallic tasting brew. Yuk. This is due to the milk breaking down. Cheers, FC.
